Elizabeth "Betsy" Prevost

Elizabeth "Betsy" Prevost, 78, passed away peacefully surrounded by her family and friends on January 10, 2025. Betsy was born on April 23rd, 1946 Leeden and Margaret Benner in Elizabeth, New Jersey. She loved growing up as a "Jersey Girl" and spent her summers attending Girl Scout Camp at Camp Lou Henry Hoover and at the shore.

Betsy was married to Thomas Prevost on May 9th, 1968 in Elizabeth, New Jersey. They moved around the country, eventually settling in St. George, Utah. There, they founded and owned the Mushroom Farm, a restaurant on Bluff Street. They had three children together then later divorced. She eventually went on to deal black jack at the Virgin River Hotel and Casino in Mesquite, Nevada, and later the Casablanca, where she was named Employee of the Year in 1998. She retired in 2010.

Betsy loved to camp and instilled that love into all of her children. The family spent almost every summer while Betsy's kids were growing up camping in Pine Valley, Utah and at Baker Reservoir. Some of the best family camping trips happened at Bolsa Chica State Beach with her beloved "Palace" and her three amazing grandchildren, Samantha (28), Aaron (27), and Noah (26). .

Betsy had a very active social life and had many incredible friends who will miss her dearly. Always the life of the party, she enjoyed the company of those who did not mind making a little mischief. Sarah Soderlund, Tammie Richeson, Danielle Duboise, Brent Bessire, and J.R. Miller were incredibly special to her. She had a huge impact on J.R.'s kids, Matthew Miller, Caity Shadel, and Karly Anderson, and was an additional mom to them. She loved watching HGTV and was an eager "do-it-herselfer". She loved tending to her beautiful garden. She could often be found sitting on the back patio, a cigarette in her hand, enjoying her pond and watching her hummingbirds. Betsy lived every day to the fullest knowing that life is too short to EVER follow the rules.

She is survived by her son Thom Prevost and his wife Marci, her daughter Meg Prevost and her partner Steven; her three grandkids; her nephew Ken (Leann) Slack; her niece Nikki (Jim) Buck; her five grandnieces and grandnephews. She is preceded in death by her parents; two sisters, Emilie Benner and Margie Slack; and son, Sterling (Enny) Prevost. A celebration of life will be held March 8, 2025 with details available from family members.
