Doris Jeannine Schimek, 79, of St. George, Utah, passed away peacefully on December 29, 2024. She was born at home on October 26, 1945, in a small town named Bainsville, near the border of Ontario and Quebec Canada, to Cecile and Rene Poirier.
Doris grew up on a farm in a large, loving family, where she developed her strong work ethic and appreciation for life's simple joys. At the age of 18, she moved to Montreal, where her adventurous spirit blossomed. She fearlessly traveled the world on her own, exploring Europe extensively and finding favorite destinations in Morocco and Thailand.
Doris was a woman of many talents and passions. She loved expressing herself through poetry, music, creating stunning charcoal portraits, and crafting pottery. Her deep compassion led her to a career as a massage therapist, and she owned her own practice, dedicating herself to helping and healing others.
She is survived by her loving husband, Peter Schimek, her stepson Peter Schimek and her four children: Lisa Edwards, Naomi Schimek, Nicholas Schimek, Dominic Schimek. And her beautiful Grandchildren, Tyler, Sarah, Michelle, Alayna, Kyle, Taylor, Mia and Oscar. And was expecting her first great grandchild Tennyson in April. Doris was the cherished daughter of Cecile and Rene Poirier.
A service to celebrate Doris's extraordinary life will be held on Friday, January 10, 2025, at 11:000 a.m., with a viewing prior from 9:30-10:30 a.m. at Spilsbury Mortuary in St. George, Utah. Interment will follow at the Tonaquint Cemetery. Friends and family are invited to attend and honor her memory.

Doris's fearless spirit, creativity, and boundless love touched the lives of everyone she met. She will forever be remembered for her kindness, artistry, and the legacy of healing she leaves behind.
